It was time for cooking club again today and once, again, I loved it! Such a great group of women from all over the world... Denmark, Norway, Australia, England, the US, Canada, Mexico, Italy, Poland, and Hungary. Today, our "teachers" were from the southern United States and from Mexico, so our menu was Pimento Cheese, White Chicken Chili, Pork Loin Cochinita Pibil Syle, Pineapple Pico De Gallo Salsa & Homemade Corn Tortilla with salad and cornbread for sides and pie and cookies for dessert!
Whew! We certainly got plenty of delicious food to eat at the end and some great recipes to take home! Who would have ever thought that I would learn how to make homemade corn tortillas in Stockholm, Sweden. But, I did and they were fantastic!
After cooking and eating and socializing, I did a little bit more Christmas shopping before heading home to meet Josh. We then went over to school to see Calvin and Max play in the winter music recital. We were so impressed with both of them! Max has been playing the guitar for several years but in this song, he played a bit of improv to add some blues to his song. Loved it! And, Calvin has only been taking drum lessons since we moved here so he has only had a total of 11 lessons but he did great! So fun to watch! The recital was optional so Tabitha opted out of playing her guitar. She is a teenage girl on a new instrument so not eager to get up on stage!
I can't get Max's video to load but I will try again later...
